Chocolate Chip Mini Muffins

Chocolate Chip Mini Muffins (24 mini muffins)
Ingredients
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ⅓ cup melted butter (or neutral oil)
- 1 large egg
- ½ cup milk
- 1 teaspoon vanilla extract
- ¾ cup mini chocolate chips, plus a few extra for the tops
Instructions
- Preheat oven to 375°F.
- Grease or line a 24-cup mini muffin pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, egg, milk, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Fold in the chocolate chips.
- Fill each mini muffin cup about ¾ full. Sprinkle a few extra chocolate chips on top if desired.
- Bake for 10–12 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean (a little melted chocolate is fine).
- Let cool in the pan for 5 minutes before transferring to a wire rack.
Store in an airtight container for 2–3 days or freeze for up to 3 months.
