Chocolate Chip Mini Muffins

Chocolate Chip Mini Muffins (24 mini muffins)

Ingredients

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ⅓ cup melted butter (or neutral oil)
  • 1 large egg
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ¾ cup mini chocolate chips, plus a few extra for the tops

Instructions

  1. Preheat oven to 375°F.
  2. Grease or line a 24-cup mini muffin pan.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk together the melted butter, egg, milk, and vanilla.
  5. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Fill each mini muffin cup about ¾ full. Sprinkle a few extra chocolate chips on top if desired.
  8. Bake for 10–12 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean (a little melted chocolate is fine).
  9. Let cool in the pan for 5 minutes before transferring to a wire rack.

Store in an airtight container for 2–3 days or freeze for up to 3 months.
